The simplest of things is usually the best. This creamy walnut cheese has pomegranate and just a touch of chives.
200g soft goat’s cheese
3-4 Tbsp whole Milk
Finely chopped walnuts, 30g
16 cocktail blinis
3 Tbsp Pomegranate Seeds
To serve: Finely chopped chives
- Combine the cheese and milk together in a bowl. Once the cheese is smooth, add the milk. Finally, mix the nuts in.
- Place the blinis onto a baking sheet half an hour prior to serving. Warm the blinis on each side for approximately 1-2 minutes under a grill or for 5 minutes in an oven at 190C/170C fan/gas 5. After that, let them cool down to room temperature for 20 minutes.
- Pile each blini with a teaspoon of the walnut goat’s cheese, drop half a teaspoon of pomegranate seeds on top and dust with chives.
GET AHEAD The walnut goat’s cheese can be prepared several hours in advance, in which case cover and chill.
