Professional chef shares his secrets for poaching perfect eggs each time. 

Andy Hearnden from New Zealand, who is now a Sunshine Coast chef, shared the secrets of perfecting his breakfast recipe using fresh eggs. Hearnden posted the video to TikTok. 

“The best thing about eggs is their freshness. The foodie explained that fresh eggs are essential for poaching well.

Explains that eggs should be cooked within three to four hours and not more than two weeks.  

Andy begins by bringing a large saucepan of water to boil. Andy then adds a good three-finger pinch of salt and two tablespoons plain white vinegar.  

He advised you to ensure that the water boils quickly before adding your eggs. 

“The water temperature drops quickly once you put in a cold or room temperature egg,” he said.

He lifts one eggs out of the water but notes while it's well formed, it's still 'a bit jiggly in the middle' so places it back in the pot a little bit longer until slightly firmer.

Fresh eggs should not be more than three-to four days old, if at all possible

Bring approximately four litres water to a boil in a large saucepan. Add two tablespoons vinegar and a pinch of salt.

Place your eggs in the pot so that they are as close as the surface of the water as you can. Be careful to not burn yourself.

To control the temperature, reduce your heat when water is making large bubbles.

The eggs will be firm enough that they can be lifted from the water after about two minutes. If eggs appear to be fully formed in the center, but are very soft or jiggly at the edges, return them to the water and let cool down until firmer.
