
This is my favorite dish for comfort food, warming and easy to make. I use the miso mix that comes in a packet with the noodles just because I don’t really use miso in anything else – but if you do then you can just use ramen noodles and add 1 teaspoon of miso paste. You can add any green vegetables you like.
TAKES TEN MINUTES
SERVES 1
1 tbsp olive oil
1 salmon fillet, weighing in at 240g
Pack of 204g miso-ramen noodles
¾ tsp chilli flakes
3 slices of fresh ginger peeled
2 pak Choi, cut lengthways
3 sprigs each of coriander
Sea salt and freshly ground pepper
- Pre-heat the oven to 200C/180C fan/gas 6.
- Cook the salmon. Place the olive oil in a frying pan on a medium heat. Once the oil has melted, add the salmon to the pan skin-side up. Season the salmon with salt & pepper. After turning the salmon, cook for 1 minute more. Once the salmon is cooked, transfer it to the oven for 8 minutes.
- If you use a readymade miso ramen packet, such as mine, then add the noodles, chilli flakes, sliced ginger, and ramen mix to a saucepan. Then, pour 300ml boiling hot water over them. Alternately, you can mix 1 teaspoon of miso paste in the boiling water with 1 serving of ramen. Stir the mixture in the pan on a medium heat. Cook the pak choi for 3 minutes.
- Mix all the ingredients together in a bowl. Add the salmon to the bowl. Add the coriander to the top, and enjoy!
