When guests book a stay at Claridge’s, they look forward to dining on lobster en croute, caviar and foie gras in art-deco splendour at the top Mayfair establishment known as an ‘annexe to Buckingham Palace’ because of its long- standing connections with royalty.
But soon its regulars will have to start eating nut roasts, lentil stews, and other delicious dishes.
The five-star hotel’s star chef Daniel Humm is in tense discussions with me because he plans to make the restaurant completely vegan.
An insider told me that it was a nightmare for hotel staff. The bosses are afraid that Humm may leave if he doesn’t meet his demands, meaning they will be without Humm during Christmas, when it is their busiest season.
“But, if they make the restaurant vegan they’ll upset many regular customers.”

Humm recently made headlines around the world by turning the £250-a-head menu at his three-Michelin-starred New York restaurant, Eleven Madison Park, totally plant-based.
You can also enjoy dishes like cucumber with melon, smoked daikon and Swiss chard or courgette with lemongrass & tofu.
Meanwhile, the four-course menu at his Claridge’s restaurant, Davies And Brook, costs £125 a head and includes such mouth-watering options as caviar with sweet potato bonito and English muffin; roasted venison with beetroot; and, of course, foie gras with black truffle.
According to A Claridge, a spokesperson for the company confirmed that they are in discussions with Humm regarding his request. He said: “We are continuously reviewing the offerings at Davies and Brook, including the possibility of an entirely plant-based menu.”

But, I have been told by sources that the diplomatic reply hints only at tensions hidden behind closed doors.
Humm (45) made a stop at Cop26 Eco Summit in Glasgow this week. He stated that his goal in life is to make plant-based foods delicious, magical, and luxurious.
He said, “It’s better to our planet and for our health.”
Although such an abrupt change might be appealing to a young generation, Claridge’s will remember the motto: “Go woke, go broke.”
