One foodie shared her recipe for creamy mushroom bruschetta. 

Ayeh Far of Sydney stated that creamy mushroom toast can be used for breakfast or lunch, and it is lighter than many other varieties which use lots cream or butter.

In this Instagram video, the celebrity Australian cook, known online as “Cooking with Ayeh”, begins by cutting up onions, garlic, and mixing Portobello, Swiss, and Swiss mushrooms.

Sydney foodie, Ayeh Far, has shared her recipe for creamy mushroom toast that she says is a perfect healthy for lunch or brunch option

Ayeh Far from Sydney has posted her recipe for creamy mushrooms toast. She says it is healthy and delicious for breakfast, lunch, or brunch.

“I love mushrooms and their umami taste. They have a meaty texture so they’re a great meat substitute in so many dishes,’ she wrote.  

She adds a tablespoon of olive oil and a sprinkle of sea salt to a pan with her sliced onion and sautés until translucent.

Ayeh first adds garlic to the skillet, then mushrooms. After adding olive oil and turning up heat, Ayeh turns on the heat.

Once the mushrooms have browned, Ayeh seasons the mix with chopped parsley, salt and pepper

Ayeh first begins by browning onions, garlic, and mushrooms on a skillet with olive oil. After the mushrooms are browned, Ayeh adds seasonings such as salt, parsley, and chopped Parley.

When the mushrooms have brown, she adds salt, pepper, chopped parley, and turns off the heat. 

To make the salad mixture, add some rocket leaves to a bowl. Then, mix in some balsamic vinaigr, light olive oil, and a pinch salt.  

After toasting a couple of slices of bread – Ayeh said her favourite to use is whole grain sourdough –  she layers her bruschetta by spreading on some ricotta cheese, adding some of the dressed rocket leaves then layering some mushrooms on top.

She then adds her cooked mushrooms, garlic and onion top and sprinkles with chilli flakes

Ayeh mentioned that chilli flakes can be sprinkled over mushrooms to enhance their flavor.

This recipe is vegan-friendly by using a substitute for the ricotta.

Recipe: Ayeh Far’s cream mushroom toast 

Ingredients:

 Portobello and Swiss mushrooms

Olive oil extra virgin

Sliced onion

Finely chop garlic

Parsley chopped 

 Ricotta cheese

Bread made from whole grains

Rocket

Balsamic vinegar

Chilli flakes (optional) 

Method:

1.  Sauté onion in one tablespoon of olive oil with a sprinkle of sea salt for a few minutes over medium heat

2. Once the onions are translucent, add garlic and sauté for a couple of minutes

3. Slice the mushrooms and add them to the pan with a drizzle of olive oil and sauté over high heat 

4. After the mushrooms have brown, season the pan with salt, then add the chopped Parsley.

5. Mix together the rocket leaves, balsamic vinaigr, salt, and a drizzle of olive oil in a large bowl.

6. Toast the bread with some ricotta cheese and add layers of dressed rocket leaves, the mushroom mixture and ricotta cheese on top

7. Sprinkle some chili flakes on top for an added kick

In an earlier video she showed how to make the perfect sandwich using avocados, hummus and beetroot. 

Ayeh said, “I don’t lie when I tell you that this is one of my favorite sandwiches”   

Start by grating beetroot. Slice the tomato and cucumber into thin strips. Ayeh favors Persian cucumbers or Lebanese cukes because they’re more watery and crisp.

After smashing your avocado, season it. ‘It’s so nice and creamy and replaces the need to add a sauce, butter or mayonnaise’, says Ayeh.

Next, select the bread that you like and toast it. Ayeh prefers wholegrain sourdough because it is high in protein, which makes it her favorite.  

Once you are ready to assemble the dish, spread the hummus on one slice of bread and then add cucumber, tomato, season, and salt.

Ingredients: 

  •  2 slices sourdough bread
  • 2 slices of tomato
  • A large assortment of alfalfa sprouts 
  • 1 butter lettuce leaf 
  • Salt and pepper are to be tasted 

  •  2-3 tbsp hummus
  • 1/3 of a cucumber 
  • 1/4 Beetroot 
  • 1/4 avocado  

 Method: 

  1. This is the first step to making your own homemade Hummus.

2. You can grate beetroot with a box grater. I recommend wearing gloves

3. Use a fork to smash the avocado and season it. The cucumber and tomato should be cut into small pieces.

4. Toast the bread and cut the hummus into one-inch pieces

5. Next layer cucumber slices and tomato slices. Finish by adding the grated beetroot and alfalfa sprigs.

6. Place the avocado on the second piece of bread. Cut the sandwich in half by closing it.

7. Get a delicious and colorful Vegan Sandwich
